I AM SO GLAD I DIDN'T READ THE REVIEWS BEFORE TRYING THIS. IT WAS FANTASTIC AND EVERYONE ASKED FOR THE RECIPE AND THOUGHT MAYBE WE HAD ORDERED THE MEAT FROM A CATERER OR RESTAURANT!!
All that citrus seemed like a lot, and perhaps others cut back on the juice or their ovens are running too hot. Otherwise, I can't figure why it would dry up and burn.
We used two 4 pound Boston butt and roasted them in the same pan side by side. The initial hour we cut to maybe 45 min, as it was blackening a bit. And the overall roast time was possibly 30 min. less than suggested. We went by the meat thermometer. There was tons of marinade. We marinaded overnight. Substituted ground cumin for seeds. Other than that, pretty much stuck to the recipe. I will definitely make this again.

I consider myself an above-average cook. This was by far the worst meal I have ever made. It was a lot of work, a lot of time, a lot of money and a lot of waste. My husband and I waited all day, waiting for this incredible dinner. It was inedible and had to toss it all, including my roasting pan, which the citrus had burned so badly I did not want to waste more time trying to clean it. Such mixed reviews, did we all read the same one? And, p.s., your webside it sooooo slow. K. Schirmer

This is the best pork roast I have ever made, and can't wait to make it again. Well worth the effort. I don't understand the bad reviews. I followed the recipe to the letter and the flavor was fantastic with every bite. There was plenty of sauce to baste with and plenty left over to serve with the pork. I cooked for a total of 5 hours. I made this for a dinner party and everyone raved about it.

I don't know why other people had a hard time with this recipe, I soaked it for 48 hours and braised it like the instructions said, although my cook time was shorter by 30 minutes, the pork was flavorful, tender, and just out of this world. My husband liked it so much he was thinking of replacing the Thanksgiving Turkey with this recipe! It's the bomb!

I made the roast today after marinating it overnight. Something has to be incorrect with this recipe. After adding the marinade to the roasting pan and covering tightly with foil, the marinade was a burned gooey mess on the bottom of the pan. I had to transfer the roast to another roaster.....and of course, there was nothing to "occasionally baste" with. I was so looking forward to this meal.......the temperatures or time have to be wrong!

I made this roast today. I marinated overnight and prepared exactly as stated in the receipe. Although the roast was tender, it just wasnt as flavorful as I expected. You have the good seasonings on the outside, but I expected more flavor on the inside. Could be that I just like a lot of seasoning. My mom said she could taste the citrus. Would I make it again...? Probably not. Too much work, not enough flavor. Maybe I should have marinated longer. I marinated for 12 hrs.

    Good luck!
