    Great dish! I prepared this exactly as it was written. Although I wouldn't change anything, the other thing I would add to the end of the dish would be some fried sage leaves to add a little flavor crisp.

    I am sure it will be better when I prepare it again. I do not intend to add even half the salt it calls for ... and I'm a very light user of salt so added only when told to. I'd rather have too little salt than too much. First recipe I've tried from FN that I haven't enjoyed. Maybe next time.

    I made some substitutions because I was looking for something quick with the items I had on hand:
    1. cut my medalions from an 18.4oz Hormel Apple-Bourbon marinated tenderloin
    2. used beef broth instead of chicken broth
    3. used yellow mustard instead of whole grain mustard
    4. used 1/2 of a purple onion
    This turned out great and will be one of my fall quick recipes. I think the Apple-Bourbon marinade added a smokey flavor that complimented the other ingredients very nicely!

    Wow was this recipe overloaded with onion, my goodness, other thanthat it was a little bland on the taste side, but the apples were a nice compliment to the pork!

    this was the first time i made this but it turned out spectacularly well! the pork remains tender - which is often hard to pull off - and is accented superbly well by the softness of the sage and the sweetness of the apples. to quote my boyfriend, "it has great flavor!"
