    Brilliant! This was a big hit. I used marlin- a random find in my local co-op. I also substituted Piment D' Espelette, this incredible Basque chile for the red pepper flakes. It complimented the tomatoes so perfectly, and gave the whole dish this lovely and aromatic quality. You can find that pepper at world spice. com / spices / piment-despelette and if you haven't tried it yet, I'd highly recommend it.

    I couldn't find Red Snapper so I used Mahi Mahi instead and it worked out great. This would probably be good on any type of fish! Very simple, easy, and quick. This would be good to make for company. It is pretty on the plate! I will be making this again!

    I have a grape tomato plant and one cherry tomato plant both about seven feet tall and they yeild about 50 tomatoes every three days!! I've been looking for any tomato recipes lately and this one takes the cake!! I used salmon filets I caught in Alaska and the dish is still wonderful!! Could substitute any fish I would imagine. Great use of tomatoes!!

    I've made this several times and absolutely love it. I actually do a few more tomatoes because we love them so much, but it's absolutely worth trying and saving. It's important that you cook the snapper right and get a good filet of fish, I think. A good snapper will always taste good though, and if not over cooked will really make the meal. Definitely make this for dinner, you're family will love it!

    I find that the fish was cooked through well, but turning the heat off while the skin side cooks does not work too well, the skin doesn't get crispy and loses its purpose. Also, I am not a huge fan of roasting the tomatoes I would prefer to make a Caprese salad instead.
