Directions
Thinly slice 10 ounces snow peas lengthwise. Toss with 2 thinly sliced celery ribs (add the leaves, too) and some toasted walnuts. Dress with olive oil and lemon juice, and season with salt and pepper. Gently stir in a thinly sliced avocado and minced chives.

I am stunned how good this salad is. The flavors are amazing together. I used pine nuts instead of walnuts... that's all I had in the house. But I don't think it hurt the flavors at all. Now I'm excited to try it again with my own additions. This is a keeper!

Couldn't stop eating it! Lots of great texture and flavor. Maybe a little cilantro would be a nice addition.
