Directions

Mix 2 cups flour, 2 teaspoons sugar and 3/4 teaspoon each baking soda and kosher salt in a bowl. Work in 2 tablespoons diced cold butter by hand. Add 1/2 cup raisins and 1 tablespoon caraway seeds. Mix in 3/4 cup buttermilk. Pat out the dough until 1 inch thick; cut into four to six 2 1/2-inch rounds. Bake at 375 degrees F, 15 to 20 minutes.

    I made these for St. Patrick's Day, on a whim and as per recipe, except the store was out of buttermilk so to 1 c. of whole milk I added 1 tbs. lemon juice and let stand til thick. I used 3/4 c of this mixture as per recipe. What a great surprise... easy, tasty and everyone loved them! They reminded me of scones.
    Next time made I used low sugar dried cranberries and the same buttermilk substitution. I was short of time so rather than press the dough out and use a cutter I just spooned out apx 10- 2" blobs of dough and baked 18 minutes. They were appealingly rustic and just as tasty as the perfectly formed ones. I will use this method in the future.
    This recipe is such a good basic and not too oily. Add chopped dried fruits or/and nuts of choice and sprinkle w/sugar before baking... makes a perfect breakfast bread. Add garlic and herbs ... a delicious savory biscuit with meat. Next time I'll try with cheese and herbs...

    I had to add a little bit more buttermilk. They were a great addition to our St Patrick's Day meal. They were lightly sweet.

    Loved them. Quick, easy and tasty. You could add your own variations of fruit. I added orange zest and substituted dried cranberries for half of the raisins, to make a sort of non-traditional/traditional irish soda bread. I kept everything else the same and would make them as directed as well. I was trying to appeal to the kids and the rest of the non-irish folk at my dinner table. Everyone loved them. A nice touch to our otherwise traditional St. Paddy's day dinner. (The left overs were great in the morning with tea!
