    Either the 12 ounces spaghetti were too much, or the "sauce" wasn't enough because this dish was very dry. After spending an hour putting this pasta together I was embarrassed at the end result - looked good but tasted blah! I had an Italian Mom who couldn't cook much but when she made Spaghetti Carbonara it tasted wonderful. If she'd been around to taste this, Rosa would've shaken her head.

    I have a girlfriend that is an Italian from Wisconsin living in Germany... Her and her husband used to have my husband over before I got there and he fell in love with her recipe of this. After we moved I decided I was going to make it myself, so i searched for a recipe! I served it to my husband who was very unsure I could beat her recipe! OMG! It was so heavenly he only allowed me one serving while he ate it all! I honestly love the bacon better then the Pancetta, I have tried them both. Also I like using cognac better then brandy, it just taste much better! I shred lots more cheese then the recipe calls for. I also try and cut the calories when I can, sub turkey bacon instead of beef or pork, sub Miracle Noodles if you don't mind the price or zuccini pasta. Good luck with the cheese, unfortionately there is no substitute!

    We can splurge a little and have an "unhealthy" dish once in a while if it is this delicious and easy. Our whole family pitches in to make this and dinner is ready in a flash. As for its authenticity, in my little corner of the world, thick sliced bacon is a readily available commodity. This is a much appreciated addition to our family favorites lineup.

    I read all the reviews before making this recipe and adjusted some ingredients to make it healthier. I used turkey bacon and egg substitute. I also added cooked mushrooms, fresh green onions, and fresh tomatoes to the mixture. It was sooooo yummy. It will become something I make often.

    Simply the best of comfort food! I just finished eating it and I had to express what I feel what right now... It was easy to make, it looks yummy, and it tastes like heaven! I will definitely make it again!

    Come on people - judge the recipe, not the calories! If you're looking for a "light recipe" carbonara is not it (regardless if it's the "original" type of cheese, etc, but don't give it 1 star because you think it's unhealthy and don't rate it 1 star if you haven't even tried it.

    I look for recipes and sort it by ratings and if you give it a poor rating because you didn't like the calorie count or hadn't made it because you didn't like the ingredients, DON'T rate it. Just move on and rate a recipe you have tried.

    I tried the recipe, just as it was and found it to be quite good. I might make some adjustments to suit my personal tastes, but that's what cooking is all about. Just my opinion.

    Based on the amount of olive oil, cheese, bacon, and egg yolks in the recipe, 888 is probably correct. (Calculate the number of FAT Grams per serving.

    I think they divided the portions by 2 instead of 6. By my rough calcuation, the total calories for the dish should be around 1800. So the accurate calorie count per serving should be 300 not 888

    Sorry!!!!!!Thi is not the Original Carbonara.The ingredients are:Guanciale (pork ciksblack pepper,egg yok,salt,spaghetti and parmigiano or pecorino.
