I was a bit discouraged after reading mixed reviews, but decided that it was worth a try as one negative review, in particular, seemed a bit melodramatic. I'm glad I did!
This recipe is super easy, quick, and very tasty. I used white wine in place of the cognac and added more cream and cheese to my own liking. We also skipped the jalapenos since we have a little one in the house, but I think it would add a great flavor to the dish if you like it spicy!

I saw this recipe in the magazine and thought it was worth a try. My family
really liked it. I've never made carbonara without cream and was a little skeptical, but it was creamy enough. The only substitution I made was asiago
instead of the romano because that's what I had at home. It was great. I will
make it again. Thanks!

Made this last night for the hubby and me! He couldn't stop eating it. I didn't have any spaghetti so I used penne. Couldn't find any jalepenos which is fine, my husband doesn't like heat. We don't drink so no alcohol. BUT boy was it mouth watering. We will make this again and often!!

I never tried spaghetti carbonara before. I love to cook and try new things.
This is a KEEPER! Easily put together and sooooo tasty. I did add a bit
of half and half at the end to make it a little creamier. Other than that, I made it as stated. Used angel hair pasta.
My hubby loved it!

This one is a keeper for sure, i followed all the steps and turned out delicious really and btw i'm not a connoisseur but i'm pretty sure that is pecorino cheese what rafael was trying to write not pecarino but love the recipe and yea its pasta we cant go wrong with that!

Although I've made Carbonara with several different recipes, I've never prepared the bacon this way - cooking it first with oil, spices, water, etc.. I didn't think it would work but wow! I used wine instead of cognac (thanks to the other posters for that tip. Since I usually add some heat, having jalapenos built into the recipe won my heart - not to mention taste buds - over. Othe suggestions I'd make are to add sauteed mushrooms and/or shrimp,
And you go, Shyla! I've often wondered the same thing. If I don't like a recipe, I just state why. Pick your battles, folks - lots of other things in my life I can rant 'n rave about without adding recipes to the list. Try this one and I'm sure you'll like it, too!

I haven't tried this particular recipe yet... but before I try any of the recipes on this website, I always like to read the reviews first. I think it helps when making adjustments, or perhaps ideas on how to tweek them to better fit my family. There are many great ideas and additions... if you just read viewers comments:
My real question is simply this: What is with all the ANGRY people commenting on here?!?!?!?!?! If you don't like something, can't you say it NICELY!? There is no reason, in my opinion, to "bash" a recipe/Food Network/ or other viewers/readers JUST because you have a difference of opinion, or a different experience with a dish... honestly! Please keep your anger at home... and enjoy this website for what it is. Happy Holiday's to all :

I've made this for years with leftover ham instead of bacon. I leave out the jalapeno peppers and add white wine instead of brandy. Add some fresh basil and a little fresh parsley along with sun dried tomatoes to make it even better.
My family also adds more pepper and cheese at the table as some like it a little spicier or cheesier. Serve with a salad for a complete meal.
