Spaghetti With Quick Turkey Chili

Ingredients
  • Kosher salt
  • 2 tablespoons extra-virgin olive oil
  • 4 scallions, sliced, white and green parts separated
  • 2 large cloves garlic, finely chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 pound ground turkey
  • 2 cups low-sodium chicken broth
  • 1 14 -ounce can pinto beans, drained and rinsed
  • 3 tablespoons ketchup
  • Hot sauce, to taste
  • 8 ounces spaghetti
  • Shredded cheddar cheese and sour cream, for topping (optional)
Directions

Bring a large pot of salted water to a boil. Meanwhile, heat the olive oil in a large nonstick skillet over medium heat. Add the scallion whites and garlic and cook, stirring, until soft, 1 to 2 minutes. Add the tomato paste and chili powder and cook, stirring frequently, until the mixture is brick red, 2 to 3 minutes. Add the turkey and stir, breaking up the meat, until almost cooked through, about 4 minutes. Add the chicken broth, beans and ketchup; bring to a simmer and cook until the chili is slightly thickened but still soupy, 12 to 15 minutes. Stir in the scallion greens and hot sauce.

Meanwhile, add the pasta to the boiling water and cook as the label directs, then drain. Divide among bowls and top with the chili, cheese and sour cream.

    A good substitute for Cincinnati, four alarm chili. To make it even lighter, I used Greek yogurt in place of spirit cream and a light cheese mix from TraderJoe's. I thickened the sauce a bit with more tomato paste. Used Tabasco sauce at the end for a little kick. A new fav at the house.

    yes it was like kick to it but really good and i think the meat was really good.

    Took a chance and tried this recipe, since it received so many great reviews. Although to me it seemed more like a recipe from a Chopped episode...Ok chefs you have 30 minutes for the entrée round - Your secret basket ingredients are ground turkey, ketchup and spaghetti. And I'm assuming this chef was chopped. Other than the chili powder there was no flavor, the chili was extremely bland. However, based on another review I did add a can of diced tomatoes with Chili Peppers, which definitely made the dish more bearable, but not great. And besides the lack of flavor the spaghetti, chili combination was not that great. Don't think I'll be making this again.

    I was looking for a Cincinnati Chili type recipe and this fit the bill. It uses turkey so it is healthy too! I made the recipe exactly as shown. I did use whole wheat spaghetti...It is a keeper!
    Didn't know what scallion whites were and left them out. Added more hot sause....was Amazing ((:
    This was great! It wasn't as quick as I hoped it would be but easy enough. I made it for my family and my picky husband and I got 2 thumbs up across the board! The leftovers are even better!
    This was spectacular! I have never cooked with ground turkey before or in that matter made chili! I cooked this for a few friends and was nervous it would not turn out. Happy to say the recipe was perfect and EVERYONE loved it and wanted seconds. I left out the hot sauce and added additional ketchup due to a friend not being able to eat spicy food. She loved it, gave it a little bit of a sweet taste. Will definitely be keeping this recipe for future dinners. YUMMY!

    I made this tonight and my whole family loved it, even my uber-picky 7 year old. It will definitely be a "do-over", thinking I might add some diced tomatoes next time.
