I needed a new chicken recipe, and stumbled across this one yesterday afternoon. It will most definitely stay in my recipe box for years to come! It was so easy to throw together, I had everything on hand and it was different than any other chicken recipe I've tried. Even my boyfriend, who is not a chicken fan, had seconds! So easy, right in my cast iron pan...doesn't get much better than that! Don't change a thing to the recipe!

crowd pleaser! added more lemon and cut them in circles instead of wedges the dish looked to awesome made me feel like a pro! and the fact that they were asking for seconds did too! recipe calls for way too much onion though. didnt use it all

This dish was delish! My fiance and I really enjoyed it. We left off the lemons, as neither of us are a real big fan of it. The chicken was amazingly good. We let it cook a few more minutes as some of the other reviews suggested. The potatoes and onions were also very good with the chicken.

It was okay. Picky eaters here. We enjoyed the meat although the chicken could have used more flavor I suppose. We may need to adjust how much seasoning we apply to the chicken. Decent enough though.

i abolutely loved this. the flavors were excellent. My husband and children ate it, but were not so easily impressed as I was. However, they all said they would definitely eat it again.
The prep time was literally 5 minutes for me since, I used boneless skinless chicken breasts, and I also just put the potatoes in the oven raw, and let them cook. It was done fairly quickly. Especially at 500 degrees! I also only used one onion, but I thought it was very delicious how the onion carmelized. The smoky flavor with fresh squeezed lemon is so refreshing.
If it takes you longer than five minutes to throw this together, you are doing something wrong. =

Prep time is much longer and I used a mandolin for onion. Waay too much onion..1 large is plenty. Dont need to microwave potato first. And maybe I misunderstood directions...but do not put onion ontop of potato to roast! Roast potato...then top with onion reroast..top with chicken. The way I made it was a disapointment!

As others have said I had to cook the chicken a bit longer but the rest of the dish stayed perfect while it cooked. The onions and potatoes caramelized perfectly! This is the first big chicken dish I've ever made and it was absolutely fabulous! It got rave reviews from my somewhat picky husband :.

Wow. I didn't think that this would have as much flavor as it did. I usually doctor up recipes all the time, but I followed this to the tee except for tweaking the spice content a bit. I substituted 1 tsp of spanish paprika for 1 tsp of smoked paprika, and I added a tsp of chicken/rib rub and 1 tsp of cayenne to give it a kick. Such flavor. This is a keeper!!

It was amazing. My husband said it was the best chicken he had ever had!!! I added carrots and peas to give it a little of color and more nutritious flavor! So fast, easy and cheap dish!! Def. a weeknight favorite!

Incredible! This is my new 'go-to' recipe for any 'comin' over quick' guests. Its easy, inexpensive and to die for! I, too, followed the others in letting the thighs cook for a full 20 minutes. The onions and potatoes carmelized just beautifully. The smoked paprika was a bit pricey but SO worth it. Delicious!!
