This recipe was delicious but I eliminated the 1 tablespoon of salt. It seemed like a lot and I also couldn't find fish sauce so I used soy sauce which added more salt than the fish sauce would have. I also served it warm... excellent!

This recipe is absolutely fabulous. Not only does it carry an authentic Thai food essence to it, it is such a healthy dish to serve for family, friends and especially for those who are health-conscious. I love the contrast between the sweet, the sour and the spicy flavors of the chicken, meanwhile the lettuce gives off such a wonderful, crisp texture. Because the dish taste best when it sits in its marinade, it can be prepared in advance. It makes a great lunch or a light dinner.
