This is the worst thing I have ever tasted. I followed the recipe exactly and it was terrible. I have made several recipes off this website and this was hugely disappointing.

3 out of my 5 family members loved it! My DD doesn't like anything, so she doesn't count, LOL! Our oldest son surprised me when he didn't like it b/c he loves spicy foods. But, he didn't care for all of the veggies and no meat. However, our 12 yr old son, my DH and myself loved it. My DH hates cauliflower, and he said he couldn't even tell it was in the chili. In fact, he and my DS were fighting over the last bowl. I am making my second batch of this chili within 2 weeks per their requests, and I'm sure I'll be making it again soon. Thanks for sharing a healthy recipe.

I thought this chili was excellent! I was skeptical about the cauliflower providing the meat texture but lo and behold it actually did! The only subsitution I made was to lessen the chili powder a bit since my bf doesn't like it too spicy and I thought it was perfect! A real winner...

This is a fantastic vegan chili recipe. I added more adobo sauce to make it spicier, brewed decaf coffee instead of caffeinated, and added a tad bit more cacao powder (I used raw cacao powder instead of coco powder that uses powdered milk. The grated cauliflower was a nice twist. Definitely super bowl sunday worthy.

My favorite Chili recipe! I replace the water with beef broth which takes away from the vegetarian-ness but makes the flavor perfect! You could add meat if you wanted to but I don't think it needs it!

I made this for my 25 year old son who turned vegetarian recently. I sent tostitos for toppings instead of the tortilla and some cheddar cheese to top it off. I added hot sauce and half a jalapeño with the peppers and added half a can of sweet corn with the beans. One dark kidney and one pinto can. I halved the recipes ingredients and made a chili with meat for us with the other half. According to my son, It was very good and called me specifically while at work as a firefighter to let me know it is Do-over. Served it with grilled cheese sandwiches with Muenster and American cheese and jiffy corn muffin topped with some sugar before baking for a slight sweetness on a cold Ohio night.

I made this last night and excluded the chipotle pepper just because I didn't have any. It was ok without it, but you really need it to get the great dynamic between the coffee/cocoa/chipotle flavors. (I was super skeptical of the coffee and cocoa, but it is great! When I reheated and added the chipotle pepper tonight it was amazing! Also, the cauliflower is genius. It mimics the texture of ground beef. You won't miss the real thing and you don't have to add any of that super processed fake meat. I'm definitely going to try that out in other recipes.

EXCELLENT! This is always my go-to chili recipe. I'm a vegetarian but all of my meat eating family and friends absolutely love this dish as well. The only thing I do different is add a diced jalapeno because I like the extra kick, add a can of kidney beans and a can of black beans for more variety and instead of cauliflower I add a can of sweet corn at the end to balance out the spicyness. It always turns out great and my friends beg me for the recipe! Hearty and filling, perfect for fall and winter dinners.

Delicious. My husband and I both love meat but didn't miss it in this chili. The only change I made was I left out the corn tortillas and added a bag of frozen corn at the same time as the cauliflower. So delicious!

I didn't tear the tortillas small enough, they were a weird texture in the chili. I loved the flavor though, used all the spices as listed, and definitely didn't find it too spicy, but we really like spicy food. I totally forgot about the cauliflower, but it was good without it.
