One of my favorite things to make. I usually make it with whole-milk ricotta, but this time I used Precious Low Fat Ricotta and didn't miss a thing. Make sure the water is salty like the ocean or your balls will be bland, and don't boil the water too vigorously or they will break apart.

If you watch any cooking show, the key is to taste as you go along so you can adjust your seasoning. After reading some reviews and reading the recipe carefully, I thought these dumplings turned out GREAT! First, it says to make a sticky dough. I used more than 6 Tbs of flour to get that consistency. Also it says drop in simmering water....if you dropped the dumplings in boiling water and they fell apart, that is not the recipes fault.

I added garlic salt to the mixture and put them in the fridge to cool and firm up while I was waiting for the water to boil. I served them in a spicy Marinara over pasta. It was very yummy! I look forward to enjoying the leftovers for lunch! Would definately make again!

I love cooking- and have been doing it for a while now. I cook something new almost every single night and love making new things and when I saw this I thought it looked delicious. However the recipe is a little messed up. First of all you can't boil it unless you add in a lot more flour. So instead of adding so many extra calories. I baked them and they came out dry. They were okay- not great. I mean we finished them over a week but I definitely would NOT recommend you make them.

I cast about looking for a recipe for leftover ricotta, and came upon this recipe....Woohoo I had just enough of all the right ingredients so this was going to be a bonus!

Didn't work out though and luckily I tried just one small amount to see if it would work because it was quite a wet mixture.

I added flour to the mix, about 3/4 cup, then rolled in flour and that did the trick.

Next time, I will add a bit more nutmeg for this particular flavour and it did need salt. I did brown the butter for that flavour, and found it still bland so will add onion and garlic next time, or any number of different herbs like thyme, oregano, rosemary...

I also turned the boil down slightly mostly so I could see what was going on, and got the feeling that these little balls would do better in a slightly less rapid boil. so with the adjustment of adding flour to the mix, and possibly starting with fresh spinach that has much less free water in it, this recipe will work.

WoW!! These were really good! My mom made them and she said they were fairly easy, the only difficult part was assembling the dumplings. They tasted delicious! Healthy and good (even my picky sister ate these! , I would definitely try this recipe!

I read all the terrible reviews. I had to try these anyway. There's a restaurant near me that makes something similar and they're to die for, so I just had to try.

I added an extra 2 T of flour to the mixture to help the balls hold together. I also added 1/2 t of onion powder and 1/4 t of garlic powder because the reviews said they were bland. Even after that I had to add some more salt and pepper after tasting the mixture before I formed the balls.

After I made the balls, I put them on a wax paper lined sheet pan and put them in the fridge before cooking in the simmering water. I didn't get a single crumb that fell off.

I put them in vodka sauce and they were simple amazing! I only gave 4 stars because of the changes I had to make, but these are a must try. They were quick, easy, yummy. Definitely will make again. Husband and 16 month old loved too!

If I could give this a '0', I would. The balls fell apart in the boiled water. I should have listened to other reviewers. Don't waste your time (and money on ingrediants!

Dumplings did not hold together and the dough was rather tasteless. Never again.
