    I love these cookies! I haven't made this recipe, exactly, but I have made an almost identical recipe that I got a year or two ago from Gourmet magazine. If you can keep yourself from eating them all right away, these cookies really are best after being kept in an airtight container for 2-3 days. The texture and flavor changes, and they become absolutely sublime. Also great sandwiched with dark chocolate! As for the question, my recipe calls for baking soda, not powder.

    I was going to make this recipe, but I was a little confused. Listed in the ingredients, baking powder is shown, but in the directions, baking soda is listed. Which one do I use?

    Loved this cookie...it has a nutty flavor and the jam sandwiched between the cookies as well as the powdered sugar sprinkled on top makes for a great presentation . The jam also with that nutty flavor from the butter just seem to melt in your mouth bursting with flavor . Defintely a wonderful gift for the holidays. Watching the video was the greatest help for me as I would not have understood how to do work this dough.

    These cookies taste good and are overall very nice, but they are not really like our lusikkaleivat in Finland. Ours are more like shortbread cookies... I'll give you the real Finnish recipe:

    1 cup unsalted butter
    2/3 - 3/4 cup sugar
    2 ts vanilla extract
    ? ts salt
    2 cups all-purpose flour
    1 ts baking powder
    Jam to suit your taste (usually raspberry or apple jam in Finland

    Preheat the oven to 175 C/350 F.
    Melt the butter in a heavy saucepan over medium heat, let it boil a few minutes until it is lightly browned and the foaming is finished. Take the saucepan off from the oven. Pour the sugar, vanilla and salt in melted butter but DON'T STIR IT! Just let the mixture cool to room temperature. Next whisk together the flour and the baking powder and carefully stir them in the butter mixture. Now, with the shaping and baking you can follow the rest of the directions in the Food Networks original recipe. Good luck and I hope you enjoy!

    These are sweet buttery cookies. Enjoyable to make. Very Old World. Very pretty. Lovely for any cookie exchange or in a Christmas Gift Tin.
