    This carrot cake was good for the most part, and I enjoyed the addition of pineapple to the traditional recipe. However, the texture of the carrot cake was a little dry (I don't know if that was something I did, or the recipe itself. Also, I felt like I could taste the baby-food carrot puree' and that wasn't so good either. I probably won't make this again. The creamcheese icing recipe was DELICIOUS though, that's a keeper!!!!

    i will use this recipe over and over again! next time i'd chop the nuts and bit and not put pineapple between the cakes. i'm definitely going to try to use the batter for cupcakes.

    This cake was interesting to make and tasted great. My family loved it and thought it was just like the dense rich cake you get in a fine restaurant. The only modification I would make next time is to reduce the amount of nuts. I searched high and low for a carrot cake recipe that I thought would be perfect and this was pretty close....try it!

    This is a very good recipe! So easy to make. It is very moist and has a heavy rice texture. I will be making this over and over. I would recommend it to anyone!

    I made this cake the first time and it was a big hit at the party.

    I'll make it again with a couple of revisions - make a bit less icing (tasty good stuff but way too much for just the top and filling , use a bit more pinapple and walnuts in the cake, decorate with walnuts on top along with the pinapple, let the icing cool a bit more time in the refrigerator (it was a hot summer day when I made the cake and 20 min. was not nearly enough and bake 5 minites less for moister cake(I use thick commerical grade bake ware which will bake a bit faster.

    My dad loves carrot cake so I usually make a few each year. I decided to give this recipe a try and it is hands down the best I ever made! I did use one of my standby recipes for the frosting but added the lemon zest and pineapple from this recipe and it was so delicious:
