    This is the first time I have made a carrot cake and it turned out very well. I did alter it slightly to make it vegan, but even so, it was very moist inside and had a nice flavor. I definitely recommend it.

    I just baked this carrot cake and took a pinch of the top. Yummy! Even without the icing. The icing is perfect! Not too sweet. This will be a keeper!

    The cake flavor and texture was wonderful. However, I made it at the "last minute" and it probably did not cool long enough. After putting all that icing on it, it collapsed! Lesson: let cool thoroughly. I also felt that half the amount of icing would be plenty, since none is used on the sides. After all that everyone at the birthday party still enjoyed - we used a spoon instead of a knife.... :

    Never tried to make a carrot cake because I've been told that it was very hard to make a good one from scratch. This one is very easy to make and It was delicious!!!

    I made this for my husbands 30th birthday. Our family loved it and heard nothing but great reviews. I only had 4 of the 8oz of baby food carrots, so I used 4oz of mango baby food as well. I also decided not to put the pineapple in between the 2 layers and used walnuts on top of the cake. I highly recommend this! Enjoy!

    I made this cake for Easter. It turned out better then I could have dreamed of. The frosting was amazing and the cake was very moist and delicious. I highly recommend this cake. Your guests will be impressed. I used 8inch round cakes. That worked out just fine.

    I'm not a big carrot cake fan but I thought that the pineapple made it taste delicious! We had it at Easter and loved it!
