I added a little bit of banana and it was wonderful. I didn't care for the icing tho. Next time will defintely use butter cream icing.

I give this five stars because if I'd followed directions, maybe I would have gotten the perfect cupcake. What I did differently was to do a chunky puree of the strawberries, and add to the batter after I whipped up the sugar, eggs, vanilla and melted butter. The batter was incredible, but when baked, the consistency and crumb were more like a muffin than a cupcake. Very good, but not exactly what I was looking for. Instead of doing the glaze/icing per the recipe, I used a tub of mascarpone cheese and that turned out really well, but kind of overpowered the strawberry in the cupcake (muffin. Overall, very good but not exactly what I was hoping for. Next time I'll follow the recipe! :

YUM! I decided to make these because I was bored and I had all the ingredients it required (except for the strawberries, but I just omitted that part. It made probably the equivalent of about 8-10 regular sized cupcakes (I made six regular sized ones and a bunch of mini cupcakes.
I had a lime from one of the trees in our backyard, but while it worked for the lime zest, there wasn't any juice to squeeze from it (let's just say it had a really thick rind all the way around, so I substituted lemon juice for the icing.

Will try these cupcakes soon. Was wondering why though, someone would say they were good if they used a cake mix instead of the cupcake recipe. It's not the same really.

So I forgot to put in the milk, which made for a dense, crumbly cake. But it was still moist due to the butter I think.
I used a combination of cream cheese and whipped topping to make the frosting. All the richness of the cream cheese with the fluffy lightness of the topping. 1 package of cream cheese, 1/2 tub of whipped topping, 1/4 c of sugar and 2 zests of lime. Really yummy. I don't really like my frosting too sweet. Add more if you like it a bit more frosting-like.

It turns out that when you go the Union Square Trader Joe's at 8pm on a Friday night you may not find limes, but they have plenty of lemons. As I was in a similar situation once in college (only, instead of cupcakes...there was tequila involved I figured it would be a similar enough switch.
Absolutely delicious. I love these cupcakes and the icing was unbelievable. I am not by any means an expert baker, I am a 24-year-old who sometimes gets "cooking dinner" confused with "ordering dinner". But one of my goals while I live in NYC is to find the perfect cupcake. And I l-o-v-e these.
I just wish that the tequila situation had just as happy of an ending.
