These are amazing! Make a double batch if you're expecting people -- I was able to eat one, then the party guests started arriving and they disappeared. I'm not a skilled fryer, but I was able to do it by eyeballing things, even without a deep-fry thermometer. The only hiccup was that the meat hadn't quite cooked all the way through by the time they were browned -- I ran them in a 350 oven for 10 or so minutes be on the safe side, and they were no worse for the wear.

I had a tasting for a client for two parties and used this recipe (with lingonberry and it knocked everyone's socks off. Beautiful to serve with the sauce and easy finger food with the toothpicks. Loved it.

These are a great appetizer, but coming from a small town, pickled cucumbers or lingonberry preserves are not available. What I did was very thinly slice a cucumber, sprinkle the slices with kosher salt to soften then rinse off the salt. Instead of lingonberry preserves I used a package of dry Ranch dressing mix. I lined the outer edges of the platter with fresh vegetables. The double batch platter did not last 15 minutes and I only had a small gathering of 12 people.

Excellent recipe! It was easy to make and the cranberry preserve sauce was excellent. The only changes I made was I used all ground chicken and I used Dickinsons Cranberry Relish (that contains cranberries, oranges, apples and port wine. I think I will try this recipe in a meatloaf form with the sauce on top.
