    Very, Very Good Casserole!! The recipe I use every year is a little different especially for the topping. Mine calls for: 1-cup brown sugar,1/3-cup melted butter, 1/3-cup flour, 1-cup chopped peacns. I have some in my family that don't like sweet potatoes but will eat this casserole.

    Since I was serving diabetics I decided to use splenda brown sugar instead of the regular brown sugar that the recipe called for, this worked out very nicely. Instead of putting the potatoes in the oven and scooping them out, I peeled and sectioned them and boiled them for 20 mins, this made the casserole more lik massed potatoes, with the chunks, my family likes this.

    Over all a simple dish to make and an enjoyable one to eat. I'd make it again.

    this recipe is very simple and delicious. i omit the eggs and add a 8 ounce can of crushed pineapple.i also mix in a half bag of mini marshmallows. bake 15-20 min. then top with remaining marshmallows and bake till marshmallows brown. i make this year round for my family not just holidays.

    This recipe is fantastic. It beats the standard butter and cinnamon fare. And it put me on the family map as a legitimate holiday meal contributor. For kicks I put marshmallows on a small portion of the casserole, and my brother came in behind me and dumped the entire package onto it. It turned out yummy. Next year, I plan the skip the nuts and keep the marshmallows as the topper.
