Directions
Pierce 4 sweet potatoes with a fork; microwave 8 minutes. Scoop the flesh into a bowl, then mash. Brown 3 tablespoons butter in a skillet, then add 8 sage leaves and fry until crisp; transfer to a plate. Cook 4 chopped scallions with salt and pepper in the browned butter. Drizzle over the sweet potatoes; top with the sage.

Loved this! I made it for friends and it was such a huge hit that I made it again a few weeks later. I tried microwaving 8 potatoes at once but that didn't work out very well (I'm not a great cook with the micro so next time around I steamed them, which worked out great and was very easy! The mash keeps a long time in the fridge so I've been enjoying them as a snack. I tripled the crispy sage and stirred it into the mash b/c it adds such a great flavor.

Delicious!! Excellent side dish. This recipe is a must try. We didn't have scallions so we used chives instead... SOOO GOOD. We will definately make this again. Next time we will stir in the crispy sage so we can have it in every bit.

Really delicious! I've been looking for a sweet potato recipe that is savory instead of adding maple, brown sugar, and such. This is a keeper! I didn't have scallions so I used part of a leek and it was delicious. The only thing I would change is to add more sage because it was so tasty. I will absolutely make this again!
