    Tried the recipe as is plus a bit of brown sugar, and overall thought it was quite good; however even though I am a fan of coriander, I thought it was overpowering. I will definately make it again, but will cut the coriander in half. Will also try it with fresh thai basil instead of the coriander and see how that goes. Was also thinking it would be super yummy with shrimp instead of chicken --- mmmmmm!!!

    This soup is a staple in my house. Its super easy and delicious. The only changes I make it I add a lot more fish sauce and some sugar to taste. Delish!

    Yum! This soup is so so good. I only made a few adjustments: used lite coconut milk, added lots of fresh grated ginger, left out fish sauce (personal taste, extra tablespoon green curry paste, extra chicken, extra lime, & added 1 small diced hot pepper. I cooked the noodles separately and poured the soup over them.
    I love the flexibility of this recipe, you can alter to your taste. So yummy and hearty and healthy!

    This is a family favorite. I make a few adjustments: red curry paste instead of green; add fresh grated ginger and lemon zest (or lemongrass if you have it. I also substitute jasmine rice for the noodles. Using rotisserie chicken makes this a quick dinner on busy nights.

    Excellent! I added thinly sliced carrots and used orange bell peppers in honor of the halloween season. Also added red pepper flakes for a little extra spice. Very tasty, quick and easy. I highly recommend trying this recipe!

    Oh my goodness, My friend made this soup for me when I was sick and I swear it saved my life. I like things spicy and so we added my homemade hot chili oil and I couldn't get enough.
