Delicious!!! I really can't say enough about this one...it really is that good! I did substitute Red Thai Curry paste for the green. Not too much heat added with the change but I would keep it away from the small ones running around.
Also, substituted Japanese somen noodles for the rice noodles.
Already have a request for an encore...

Delicious! I used what I had on hand: 1 large half breast (more than enough chicken, red thai curry paste (just 2 tsp, and "lite" coconut milk. I sauted the onions in coconut oil, and changed the order a little to cook the chicken in the broth, and put in the red pepper and coconut milk after (so as to avoid the possibility of curdling the milk and not overcook the pepper. I added a tsp. of brown sugar. SO good. And WAY more than 4 servings!

oh my gosh this stuff is truly addictive- I added baby spinach at the end and it was delicious.

What a wonderful soup! My family was still talking about the next day. It is a simple soup that tastes GOOD. I added about 2 Tbs of honey to mine to sweeten it up a little and it was perfect! We also added some cilantro on top and that really hit it out of the park! I can't wait to make this soup again!

Amazing tasty soup. Have made it for relatives and they just rave what a good cook I am! I also use rotisserie chicken as a substitute. It makes it quick easy and fresh tasting. I also add a bit os salt just to bring out the flavors. .

LOOOOOOVED this. I didn't have curry paste so I made my own with garlic and fresh ginger. It turned out amazing! I'm having a dinner party at my house tonight and this is going to be on the main course!

I loved this soup it was awesome. I added a little sriracha sauce at the very end. I realized as I was making the soup that I didn't have any onions so I substituted 2 large shallots for the onion and I couldn't tell the difference. I will definitely be making this again!

Great tasting soup! I actually used a rotisserie chicken are it really saved some time. The recipe also makes more than four servings for my household so I had enough to share with my parents.
