We adore this recipe. So easy to make, and tasted just like the coconut chicken curry soup from our little Thai restaurant in town. We made this recipe for a pot luck party a few weeks back and everyone raved about how good it was. I added extra green curry paste to make it a bit more spicy...but be careful, a little extra green curry paste goes a long way and adds quite a bit of extra heat. We buy our green curry paste from a small locally owned Asian grocery store who ships it in from Thailand, as opposed to the stuff in a jar you can get at most stores. The authentic curry paste is much more spicy.

Thai food is one of our favorite types of food, and this recipe is GREAT! It is mild, so if you are a bit of a sissy about spicy stuff you will like it. True, you could add more heat, like others have suggested, but if you want a soup that's simple yet flavorful then this is your recipe! Give it a try.
Oh, and my 7 yr old loves it! He dips bread in it.

Hello,
I found that this recipe was lacking in fat and sweetness. I used unsweetened coconut milk and needed to add sugar and more fat to the soup. I also doubled recipe but not the chicken soup and that worked well

This was simple and a great!! The only thing I wish it had more of is some Heat. So i'm going to have to add a spicier curry or some other spice to give it more bite. Also I wasn't too familiar with the Thai section in the grocery store. So instead of "Fish Sauce", which i couldn't find even after going to the seafood section, I used Fish Broth. Of Course when I got home and after making it I told my wife and she was like.. "Fish Sauce should have been in the Thai section" I didn't even think to look for it there. Oh Well... Very good... Very good....

Simply awesome! I will add another tablespoon of the curry paste next time; however, as is the recipe is a keeper.
