    Excellent is the only word that comes to mind!!! I cut the amount of fat and calories significantly by using "light" coconut milk!!

    YUM!!!! We've had this soup twice now. The first time we made it exactly as the recipe calls for. It was really good, but we missed carrots. The second time, we added carrots and celery, which made it heartier. We enjoyed this soup and it has become one of our winter favorites!

    Absolutely loved the flavor, the only negative thing is that when you pop it in the fridge to store as leftovers the noodles get a bit gummy. But perfectly delicious the first time around!

    This soup is delicious and a great balance of flavor. I had red curry paste on hand, so used that instead of green curry paste. It did take me longer than 30 minutes to put together, but so worth the time; I certainly will make it again.

    Made this soup tonight and boy was it a hit! My 8-year-old had seconds. So easy and so tasty! Keeping it handy during the cold season!

    Very tasty soup easy to make. I added a little more fish sauce and 1 more tablespoon green curry paste I like spice.

    Amazing! I was trying to find a recipe that would simulate the soup I get at my favorite Thai restaurant, and I have to say, this is even better! It yeilds many more servings than just four, however. I'd say closer to 6. You MUST try this recipe if you love coconut curry soups. Don't skimp out on any of the ingredients, and as a matter of fact I added 2 tablespoons of lemongrass puree, a package of sliced mushrooms, sliced ginger root, and 4 serrano chiles sliced length wise. These were excellent touches that I would highly reccomend. GREAT SOUP!
