    But if you want to keep it spicy, don't use too much of the lime... add one tps and try it before you add more. Otherwise it's amazing! I felt like a Thai Chef :

    I have been making this for about 4 years now and I never look at the recipe anymore but wanted to post a review. My husband is a picky "meat and potato" eater so I try real hard to find other dishes that are healthier and have other vegetables that he will eat. He was nervous to try it when I first made but 4 years later it is one of his favorites and I make it about once a month. It is easy to make in large batches for guests and everyone always raves! I usually add a red and green pepper as well as the yellow for more veggies- this is a keeper!

    The prep work takes a little time but the final dish is fantastic, I did cut the Peanut oil to 2 Tbl spoons but left the rest as is and my Wife and I not only loved it, but had a good time cooking together as well. Definitely go with the Jasmine Rice... My Favorite Rice anyway. Thank You food network for a slimmed down recipe.
    I had a Gastric Bypass on 12/2/2008 and am always looking for a high protien, low calorie meal and this fit the bill, I only get 3 tblspoons of rice but at least I got the taste I love.. How about some more High Protein meals for all us Gastric Bypass folks.

    I liked this dish because it's a good way to eat vegitables in a non traditional way.
    My husband didn't like though. but I think it's because he's used to the quality of good Thai restaurants.

    I have never been much of a thai food lover, but this was wonderful. I had to change a couple of ingredients because I could not find them at my grocer. Used dry mint and just evoo and it was GREAT. I will be keeping this recipe for life. Oh and it's Slimmed. How great is that.

    I found this recipe and prepared it for a houseguest that is generally a vegetarian but likes shrimp and cannot eat much dairy or fat. It looked interesting but I didn't think it looked like anything that special. Wow was I wrong! This is probably the best stir-fry recipe I've ever made. I doubled the recipe. The shrimp (previously frozen gave off a lot of liquid after they were cooked. When I added them to the veggies and then added the sauce I felt it needed some thickening so I added a bit of cornstarch and water. Other than that I followed the recipe exactly. I was worried about it being too spicy for us but it was not. The combination of sweet and hot peppers, herbs, ginger and sauce really blend very well. Everyone loved it - vegetarians, those that generally don't like shrimp, those that generally don't like onions, and the big "meat-eaters." Its a keeper and staple.

    I halved this recipe for my husband and myself. Otherwise, I made no changes. The recipe is very good as written. We both loved it! The flavors were terrific. As Brandy, TX said, "This is the best one (stir-fry I've ever tried." I will definitely be making this again.
