We love the burst of flavor this simple snack provides.

Ingredients

  • 1/2 a ripe pineapple, peeled and cored
  • Kosher salt
  • Cayenne pepper
  • 2 tablespoons chopped fresh mint leaves
  • 2 tablespoons chopped fresh cilantro leaves
  • Lime wedges

Directions

Cut the pineapple into bite size wedges or slices.

Put the salt, cayenne pepper, mint, cilantro, and limes into small bowls. Squeeze a bit of lime juice onto the fruit. Then lightly dip the pineapple into a little salt and as much cayenne as you like and finish with the mint and cilantro.

Cook's Note: For true Southeast Asian taste add a little bowl of fish sauce to your options of dippers.

    First let me say that I am NOT a cook at all. But I love to entertain! This is one of those dishes that is unusual, really beautiful to present but best of all...SO EASY!!!
    I didn't have time/space for the individual dipping bowls so I threw the fresh pineapple chunks (with some juice in my bowl and then tossed in the other ingredients. So people just picked up the pineapple with toothpicks.
    I had the most fun watching people try it out for the first time. its such an unusual taste-sweet/salty/spicy!! But VERY refreshing and not to mention healthy.
    Maybe its not "thai" but its definitely a memorable dish that will impress your friends and stand out from the rest.
