    I really enjoyed this recipe! I am not a huge cauliflower fan so I used broccoli instead and I didn't puree it I just chopped it up in bit size pieces and baked it. I prepared this for my hubby like a casserole and had it bake it was good turned out with small chunks though, nothing unpleasant just ingredients that groups together vs smoothed out into a creamy sauce, still tasted great.

    This took a lot of time to produce a mediocre dish that gets thrown away after a bite or two, never again.

    The easy rating is misleading based on the time and the effort it took to make it. The end result is not worth it.

    The implication of healthy is also misleading and it is not very flavorful lacking both mac and cheese comfort flavor and texture. This is a light recipe??? (with 10 grams of saturated fat and 17 grams of fat all total!!! Put something in front of your children that has less fat and they will not waste 99% of it! Feed them a fully dressed HOTDOG!!! (with 11 grams of fat and only 1 gram of saturated fat.

    Next time, I am going back to my go to mac and cheese recipe that everybody eats and enjoys.

    Tasty AND different. It was difficult to get over the whole cauliflower consistency thing. However I am sure it made the dish healthier! Adding Carothers' Olive Oil to ones diet is a very healthy choice also! I so recommend it. Easy to find us on the web.

    Easy and delish, the adults loved it! I followed the directions, and it turned out perfect. I had added this to the menu in hopes that my toddler would eat it (he LOVES pasta, but he wouldn't touch it. I think your kidding yourself if you can't taste the cauliflower, but it is still yummy!

    Thank you, thank you, thank you for this amazing recipe!!.....It was GREAT!!! My 2 year old is very...and I mean VERY picky. This mac and cheese was just perfect....and a great way to get in a veggie!!

    This was very good. It made a lot of sauce, though, so next time I will use a whole pound of pasta. My ten year old did not know there was cauliflower in it until I said something. Will make again.

    I love this recipe it is easy to make once you get your bearings down. I don't have an immersion blender so I do the steps differently. I let the cauliflower cool then add it to the blender with the reserved water. Then I puree it and add it to the cheese mixture instead of trying to puree hot cauliflower and cheese sauce.
