    It was the best Mac and Cheese I have ever had. I didnt put the califlower though. I added bacon and ham to it. I am making it again and again.

    It's a cheese lover's dream. I didn't follow the recipe to the letter (because I don't do cauliflower, but I know I'll be making this again...and again... :D

    I made this as a healthy alternative to mac n cheese with some oven fried chicken and i was not impressed. It was not what I was expecting at all. It would probably be better if you leave out the cauliflower. I just found it to have a weird texture.

    one of my fav mac & cheese recipes... added gouda cheese to this as well- my boyfriend thought for a second there was bacon hidden in there from the smoked gouda- AMAZING! although- next time i think i wouldnt puree the cauliflower but just cook it & leave the chunks for another texture :

    Made this for a family reunion. No one suspected there was puree'd cauliflower in it. My only complaint - the munster cheese had a stronger taste than I like in my mac 'n cheese. Other than that, it was great and I will make again.

    This was really good. My boyfriend does not like vegetable and he couldn't even tell the cauliflower was in there. I swapped the shole for skim evaporated milk and low fat cheeses and it still tasted great.

    I just read this recipe and some of the reviews. I have to agree that there does seem to be a heck of a lot of fat in the recipe. Just because you add some cauliflowwer does not decrease the fat content but, I do plan on making it soon because it sounds so good. I would use whole wheat pasta, low fat cheeses and would probably add some brocoli.
    As for the person who used the whole pound of pasta and found it to be bland; the recipe asks for 9 oz of shells.
