You can create up to five timers

Directions

Cook 1 pound peeled and quartered russet potatoes in a pot of simmering water until tender, 30 minutes; drain. Heat 2/3 cup half-and-half and 2 tablespoons butter in the pot. Add the potatoes and mash. Stir in 1/2 cup grated truffled pecorino cheese, and salt and pepper. Cover and let stand 5 minutes.

    To respond to the question about not finding truffled cheese - I haven't looked, although, I would guess that Whole Foods might have that. I will say that I have actually made truffled mashed by adding a bit of truffle oil to the mash - very yummy!

    I looked in three different grocery stores for truffled pecorino cheese and couldn't find it. I ended up using pecorino-romano and it tasted good... but it wasn't anything different than what I've had before. Any hints on what to do if you can't find truffled cheese would be appreciated.
