    This is a very nice recipe but I did not like the stuffing. Personal preference I guess, but I will make this again but with another stuffing repipe.

    Turkey is the focus of the Thanksgiving meal, but often it's disappointing, dry, and uninspired. This year, using this recipe, the turkey was the star of Thanksgiving. We used a boneless turkey breast, removed the skin before rolling the turkey, but then draped the skin around it before binding it. We ended up with a perfectly browned and moist turkey roulade. I'm definitely holding on to this recipe.

    The stuffing was wonderful, but I think next time I would leave out the fennel seed, used kirsch as that was all I had, didn't use the wine to cook in, used chicken broth instead and I added diced thick slice bacon to the stuffing as well... turned out great!

    This was a stunning presentation!! There were only three of us for Thanksgiving this year, and I did NOT want to do the traditional turkey with stuffing. This was spectacular. I did not do the butterflying of the turkey (my husband took care of that! so can't comment on the difficulty of that, but it was so simple and beautiful. I will definitely make this again. It's a very impressive presentation!! We loved it!!

    I had a group with two diabetics come to stay with me for two days. I made this recipe and we all loved it! Unfortunately, I had to bone and butterfly my own turkey breasts, and that was a first for me. I wrestled with the first one for a while, then put the whole thing in the freezer until it was easier to work with....much easier to roll up when very, very cold. I used cotton knitting yarn when I couldn't find butcher's twine. Buying Cognac in a small southern town is interesting too. It was all worth it when we sliced into these jewels! Next time I would grind the fennel seeds separate from the almonds to make sure they break up well.
