I like to make extra mashed potatoes, I boil some extra potatoes and mix in with the baked mashed (of course adjusting the amount of ingredients to correspond with the amount of additional potatoes. This way there is plenty to fill the hollowed shell with, gives it a little more of a comfort food taste and looks prettier. In my family it's always better to have too much than not enough : happy eats

This is the easiest and most successful twice baked potato recipe I've ever tried. This one will go in my "keeper" file. Take the tops you skin off and top them with cheese, sour cream and chopped bacon and you've got a great appetizer.

BEST I've ever had and ridiculously easy. I've always halved the potatoes and it's always been hard to keep them from falling apart but with just cutting the top really gives the potato more stability. Also, I used the tops to make a yummy potato skin appetizer. Bonus!

Excellent recipe, I omitted the nutmeg and added a touch of cream cheese. Everyone asked for the recipe.

Great, easy recipe! Perfect one to add your fave mix-ins, and easy to eyeball. Just bake and fill. Made for Thanksgiving to have with surf & turf in lieu of turkey for a small family.

Awesome recipe! The nutmeg adds a perfect finish to the mixture. I added bacon as well.
