    I made a half recipe (I was looking for something basic for a couple potatoes that were not going to last. Reserved one for the next night and it was even better (reheat @ 350 degrees for 25 minutes. The potato was so easy to scoop out, and then just blend with a fork. Great learner's dish.

    Amazing Potatoes! ... I used to make these without the sour cream and with skim milk instead... it tasted great with the sour cream! ... I like my mashed potatoes a little looser than they actually came, so next time I will add a little more sour cream. Other than that great recipe !

    I added everything but the scallions because I didn't have any on hand and I substituted the sour cream for greek yogurt and the results were great! This was my first time making twice baked potatoes but it definitely won't be my last. My three year old very picky eater absolutely loved it!

    First time making twice baked potatoes, and they were really good. The only problem I found is that the potatoes have to be cooked all the way through before you scoop them out, which takes more like an hour. The scallion and cheddar flavor was great, thinking next time I may add some bacon.

    Have been making a variation of this recipe for years, always comes out great...I just add an extra 1/4 cup of chedder, and the equiv. of two slices of chopped, crispy bacon directly to the potoato mix (there's magic in bacon and chedder.

    I'll often halve the tater's too and stuff both sides.....depends on the size and shape.

    Always rocks.

    I loved this recipe and it was so easy! I mixed in some bacon bits, cheddar and scallions into the mashed before filling the shells and then topped it with a little more bacon on top of the cheddar topping. We don't eat this often but I am definitely making this when friends come over for steaks!

    These had excellent flavor and texture, I added chives and some sharp cheddar to the potato mixture...Also, instead of mashing with a fork I threw it all in a food processor and whipped it. Texture was great!
