This recipe is wonderful, as the commentators have said. But for those of you who have mashed potato recipes you love, here's your opportunity: take out the flesh, and add what you love in mashed potatoes1 Myself, I like things lite, but in this case, also decadent. So I scrub the spuds well, dry them, poke holes with a fork, rub them with olive oil, sprinkle with salt and pepper, and then bake them. When they're done, I follow the recipe, except I add light butter, fat free half and half, light sour cream & reduced fat cream cheese; also, salt & pepper to the potato mixture. Reduced fat cheese burns sooner than full fat, so be careful -- perhaps add it 1 or 15 minutes into the warm up. Also, hold the buttered & salt & peppered lids back and add them 1/2 way through the warm up. (You can make this a few hours ahead & warm them up before you plan to eat. If you make the potatoes ahead, I find it takes about 30 min to warm them through at 350. Yum, yum!

This recipe was easy to make and great. Next time I will put cheese in the middle though and bacon. Family loved it.

I just tried this recipe for the first time...the potatoes were fantastic. Even my finicky daughter enjoyed them. They were easy to make and tasted great. Thanks.

This is the best baked potatoes I've ever tried. I made a mistake of baking the potatoes in tin foil so the skin was soft when I took them out. But, I followed the rest of the recipe and they came out just fine. They tasted sooo good. I can't wait to try this recipe again.

I made this to go with a prime rib for christmas. It was delicious! I would definately recommend putting in the nutmeg, as it gives it a nice flavor. I didn't have green onions and so used onion powder instead. I will definately make this again! I have already recommended this recipe to my mom and my mother-in-law, both of whom are great cooks. I thought it was pretty easy to make.

This was a fantastic recipe - my husband was impressed with my mad potato skiils! One potato is enough to split with two people!

I followed some advice and added a layer of cheese in the middle of the potatoes. Makes it a lot easier if you use a melon baller to scoop out the potato. Delicious.

Made these for dinner tonite - everyone loved them. I did not have sour cream, so I used plain yogurt and it really worked! Was very creamy and decadent and nobody knew. If you have a serrated spoon (like one you use for grapefruit, it is easy to scoop out the potatoes. Highly recommended.
