    The filling for this potato was so easy yet so delicious. Our potatoes were smaller than recommended so I thought the scallion might be overpowering, but it was a great flavor addition. And the tops were a fantastic crunchy bonus!

    Neither me nor my fiance can wait to make this tasty tasty side dish again!

    I mashed the inside of the potatoes after I scooped them out with butter, salt and pepper. Then I re-filled the potato shells I filled them half way then put a layer of shredded cheddar cheese and bacon pieces, adding more of the mashed potatoes on top of that with another layer of cheese and bacon. The result was delicious and even my son who hates potatoes loved this recipe. This recipe takes awhile to cook even though it doesn't need too much attention. Just make sure to give yourself about 1 1/2 hr before you'd like to serve dinner to start it!!

    Served this for Valentine's Day along with Rib Eye Steak with Stilton. It was the perfect complement to the steak. My husband is already asking when are having it again.

    I didn't have any sour cream on hand, so i used a wedge of creamy baby swiss, mixed with butter and half & half. Decadent.

    This recipe was excellent! I omitted the nutmeg (didn't have any on hand, and added crumbled, cooked bacon. WOW! Easy to make and delicious . . . even the next day!
