    i made these for my husband on his birthday, and he loved them sooooo much, he bragged to all his friends how his wife can make the best twice baked potatos, so now i am making about 6 tonight for his buddies at work!

    These twice baked potatoes were great! My husband has celiac disease, and I am always looking for new, gluten-free dishes to try. This one was a winner!

    These are a mound of perfection. I add milk, bacon and cheese in the mixture as well as on top.

    First, this recipe is just delicious! Second, it's super easy! We didn't have any scallions on hand so we used shallots instead. I think that they gave a more intense flavor which the whole family liked. We also added about 1/4 a teaspoon of garlic powder. This one is a keeper. If my eleven year old can manage this recipe, so can you!
