i made these for my husband on his birthday, and he loved them sooooo much, he bragged to all his friends how his wife can make the best twice baked potatos, so now i am making about 6 tonight for his buddies at work!

First, this recipe is just delicious! Second, it's super easy! We didn't have any scallions on hand so we used shallots instead. I think that they gave a more intense flavor which the whole family liked. We also added about 1/4 a teaspoon of garlic powder. This one is a keeper. If my eleven year old can manage this recipe, so can you!
