The bacon and eggs are fabulous in this dish. I added a few more vegetables (sans water chestnuts + 1 teaspoon of sesame oil. I loved the dish with these changes.

Not my favorite food network recipe, but it wasn't bad. I used less oil and wiped out a lot of the bacon grease before adding the vegetables in. I couldn't find watercress so I just omitted that, and I served it with spicy chili sauce, which I felt was necessary for flavor. So I cleaned my plate and it was pretty easy to make (which counts for extra points in my book, but I'm not totally sold on making it again. If I do, I might omit the bacon and try chicken instead.

This dish was pretty good, I did need to add more soy sauce and used a bit less rice. I also used kale instead of watercress, because that's what I had on hand ,but overall a good rice dish.

This dish is scrumptious!!! I don't think there is a need to hold back on the bacon. Because this dish has some strong flavors, like garlic and lots of fresh ginger, 1/4 pound of thick-cut bacon (about 2 slices is perfect. I made this exactly as is and wouldn't change a thing. I served the rice with spicy Szechuan turkey lettuce wraps for a complete Asian dinner. My parents and my fiance' loved it! I will be making this again!

I can eat a whole pan of this dish! I do modify it a little bit. I use 3 cups of cooked rice and only 2 eggs in the end. I also dump out most of the bacon grease after I cook the bacon and use about 1/10th of the fat to cook the vege's for flavor. If I need to I substitute olive oil or a little water if the vege's need it to finish cooking. Last night I made the dish with broccoli, green beans and sliced water chestnuts. Didn't have any watercress. I also threw in some lemon basil, parsley and cilantro from my herb box. AMAZING!

This recipe was an absolute hit as my son loves bacon. We substituted Splenda in place of the sugar and used red onion instead of the watercress. I thought the flavors were well rounded and that the ginger added a wonderful finish. A+

Our family loves bacon, but I thought it was a little overpowering and took away from the traditional taste of fried rice. But it was easy to make and like I said, our family loves bacon, so we survived :-. Would definitely make it again!

Add more soy sauce and this is a very tasty dish. I enjoyed it and will make it again -- but not often, lots of bacon, bacon fat and soy sauce is not healthy, despite the deceptive title! First of all, it should be called Bacon Fried Rice With Vegetables as there are hardly any vegetables in this dish. Second, leftover rice, or rice chilled in the fridge for a while is best to get the right consistency. Third, the sodium content of this recipe asis is disturbingly high, but it needs AT LEAST a tablespoon of soy sauce. Two teaspoons is not enough. I just poured in the soy sauce and tasted the dish until it was right.
