SOOOOO good! It makes about 4 servings though, so I would double it!

I stumbled upon this recipe by accident but at a good time. I was in day 4 of a bad cold and was home reading recipes (I love to read recipes and I love to cook when I saw this and thought I'd give it a try. It was fast, super easy and very delicious. I used one whole stalk of celery including the leaves, one whole lime (it was small and lemons aren't readily available where I live and fresh dill as my herb of choice. I also used whole grain spaghetti broken into 1/2" pieces in place of orzo. I used my own vegetable broth. This was a fantastic soup and was very satisfying during a bad cold. Not used to writing reviews but this one was well worth the time and I have to agree with Chelsea the lemon (lime is the key to the flavor in this soup.

Fantastic and easy. I used dried herbs (just eyeballed the proportions and it turned out fine. Four serving sizes is perfect, especially when cooking for one person. I will definitely try adding more vegetables and possibly beans next time around.

OMG so yummy!!! I love making this soup, it's so super easy and so satisfying to eat. There's nothing like homemade soup, even if you're not sick. Different things i've tried is using a beef broth instead of chicken and using Ditalini pasta in place of Orzo. I think both versions are fantastic.

I've never written an online review about anything before, but this soup was so fantastic that I absolutely had to comment! I made it for my husband and I for lunch today and said it was the best soup I've ever made. It really was surprisingly delicious. I tasted it before the lemon was added and after, and I have to say the lemon makes all the difference in this soup!
I used vegetable broth (Meijer Organic instead of chicken broth, and I used Homestyle Amish Noodles instead of egg noodles or orzo, which gave the soup a really homemade comforting flavor.
I've already copied it into my recipe book and it is now going to become a staple in my home!
