Who knew I liked parsnips? As a vegetarian, I admit my repertoire is a tad limited. So I decided to try this, comforted by the fact that it's made mostly with potatoes. Delish. Really. And I'm picky. The glaze is slightly sweet, but the herbs perfectly counterbalance the sweetness. The veggies are soft, creamy, but a tiny bit carmelized. The tart crust is flaky and it makes such a yummy side dish. Or, for me, a main course. With a salad, it was my ideal vegetarian dinner. More parsnips! Yum!
