Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/8 teaspoon fine salt
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups milk, at room temperature
  • 2 large eggs, at room temperature, separated
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted, plus more for brushing the iron
  • 1 large egg white, at room temperature
  • 1/4 cup sugar
  • Serving suggestions: Maple syrup, jam, fresh fruit, or yogurt

Directions

Preheat a waffle iron to medium-high.

In a large bowl, whisk together the flour, baking powder, salt, and nutmeg.

In a medium bowl, whisk together the milk, egg yolks, vanilla, and 1/4 cup melted butter. Whisk the milk mixture into the flour mixture until a batter is formed. Take care not to over mix the batter.

In medium bowl, with a hand-held electric mixer or whisk, whip the 3 egg whites until they just begin to hold a loose peak. Scatter the sugar over the whites and continue beating until they hold a soft peak. Using a rubber spatula, fold a third of the egg whites into the batter to lighten the base. Fold in the remaining whites.

Brush the inside surface of the iron with butter. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending upon the size of the iron. (Take into consideration that the batter will spread once the lid is closed.) Cover and cook until golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron is well seasoned or nonstick it is not necessary to brush the inner surface each time before cooking the waffles.)

Serve the waffles immediately with syrup, jam, fresh fruit, or yogurt.

This recipe made a great basic waffle and I will use it in the future when I crave simplicity with syrup and butter.

They are good for breakfast but equally nice for a Waffle Ice Cream Sandwich....

......are you old enough to remember when we had homemade waffles with ice cream square sandwiches? I like the... texture..sort of full bodied, yet fluffy.... even after I mistakenly forgot to put a 1/4 cup flour in after the folding step. Next time, I would probably add some sort of spice such as cinnamon or nutmeg to enhance the flavor.Read more

This was my first time making waffles and in a new waffle maker too. Very easy. Family loved them. I served them with... Mexican Vanilla flavored whipped cream, a bit of syrup, and blueberries. Now I'm testing Paula's cornmeal waffles.Read more

I liked this recipe very much! Novice cooks shouldn't be intimidated by folding in the whipped egg whites because it really... makes these waffles very light and crisp. Just take your time and read the instructions and it will go very well. I loved the touch of nutmeg; it added that background "I don't know what that flavor is, but WOW!" That being said, *I* wasn't quite satisfied with the depth of flavor overall. I think next time, I may experiment by substituting 1/4c of whole wheat flour for the all-purpose flour. I can't describe it properly; the closest I can come is that this recipe doesn't have as much of the "bread" presence that I like. It's quite probably a case of personal preference: these waffles are gloriously light and delicious, so you will probably find that this recipe suits you perfectly!Read more

This is the first time I have commented on a product instead of a recipe. I have always loved it when Alton has consumer... testing on his show. It is a unique service and I have taken much knowledge away from them. My family are not waffle eaters but when I watched your waffle episode it caught my attention. Alton reccomended an iron I had never seen before and then oila! I found one for 80% off while shopping one day. What the heck, for the price I thought I'd try it. I can't stop making waffles and the Villaware iron is everything you said it was. It makes cooking so easy. It is your fault, I can't stop making waffles! p.s. waffles do freeze beautifully but unless you want your freezer overrun with the little discs, cut the recipes in half.Read more
