This is the best Waffle Recipe I have ever made. The waffles are light and fluffy, An the hint of nutmeg in them is so good. An I'm not a nutmeg person. But this is the only waffle recipe I use to make homemade waffles.

Delicious basic Waffle batter. Soft and yummy deliciousness on the inside, and crispy goodness on the outside.

Lovely! A little time consuming, but definitely worth it. You should expect a little labor if you are going to make waffles from scratch! The egg whites definitely added a lot to the light and fluffy consistency. Will definitely make this again.

best waffle recipe i have made. I made this two times already using the exact ingredients. 3 egg whites. i think what people are doing wrong is not mixing enough or too much or adding the sugar at the wrong time. it takes about 1.5 mins on high on a beater to get soft peaks then add sugar then mix on high for another 1-2 minutes until when you stop the beater. pull the beater up and turn it over. if the egg whites stick up and are creamy they are done if not go a few more seconds and try again. it you pick it up and it does not move you did it too much start over. this is a hard thing to master. and then just make sure you fold them correctly in three different parts a 1/3rd at a time
i think these are the things people are doing wrong and i hope this helps in pursuit of the perfect waffle. i did make some changes. added more sugar 2 TBS and more nutmeg half of 1/8 tsp more. so that is it hope this helps

I used two egg whites and it came out perfectly. I did fold them in separately and not all at once so that I could monitor whether three was too much, per the review below. They came out great and were super tasty! I also improvised the recipe a little and did not make it exactly as the recipe states. I did about half all purpose and half wheat flour -something we generally do for pancakes to make them a little healthier, so I figured it would work here. I also added some cinnamon, pumpkin pie spice and maple sugar --pinches of each in addition to the nutmeg. I would highly recommend adding the additional spices if you have them, it's not too much and adds wonderful flavor. Although, don't go out of your way to get maple sugar, it is about a $12 spice and I only had it on hand due to a recipe my mother in law asked me to make during the holidays. Happy eating~ Bethany

3 egg whites is waaay too much. Batter was a nice consistency, but came out tasting like just baked egg whites--not very tasty. Can't get past the taste of all the egg whites! I had a feeling it would be too much when I saw the mountain of them I was folding in--wow. I do not recommend this recipe.
