    Made this for a 40+ person holiday party. Served it as shooters in clear cups as shown in the picture. Everyone loved it. I definitely put in more bacon so the soup could be retitled "White Bean Bacon Soup Shooters" :

    RAVE reviews from our Christmas dinner party last evening -- chose this as our appetizer to serve around the fire pit. Picture 14 guests bundled up around a fire, clutching their cups of this delicious soup! Can't wait to taste the leftovers on day 2. Very easy to alter this to make low sodium and low fat. Used low sodium chicken broth and fat free half and half. Do not skimp on the quality of the goat cheese, though (no low fat here!. It really adds a beautiful, creamy finish. Was pressed for time so also used prepared croutons (large size instead of fussing with crostini. I doubled the fresh sage and was generous in sprinkling a spoonful of bacon crumbles on top as I served.

    This was excellent. I used a full strip of bacon and half and half instead of heavy cream. Used reduced sodium broth and beans. Thought I had goat cheese, but was out so I toasted the bread with Gruyere. I'll definitely make this again.

    I cant seem to get any taste - have now added thyme and parm cheese - hopefully the crumbled bacon and croutons will bump it up a little.

    This soup is super easy and absolutely delicious. I used a whole strip of bacon instead of half and it came out beautifully. Definitely making this for the holidays!

    I made this soup last year for a Christmas party and it served it exactly as pictured. My friends loved it so much that I got requests for it again at this year's party. So I just made it again tonight 6 days in advance of the party and did not add the cream yet. (I'll add it the night of the party when I heat it up. I triple the recipe, as well as double the amount of bacon called for. It makes it so rich and luxe...and then the heavy cream makes it so velvety...it's the best soup ever. Don't skip the crostini. The flavor/presentation payoff is totally worth the effort. Just cheat and buy your crostini pre-made at whole foods, or wherever...EAT THIS SOUP NOW! Ted Allen is my holiday hero.

    I give this one three stars, and my partner gives it four (probably because it has bacon!. I didn't have time to do the croutons, and I imagine that it the flavour probably benefits from them. The cayenne is an interesting contrast to the strong flavour of the white beans, and the soup is definitely better WITH than without (I tried!. I also ended up straining it. It was fairly simple to make. In hindsight, maybe I used too much sage (I had dried. I'll use just a pinch next time and then add more if it needs it. I will make this again, but it won't be one I make OFTEN.
