    Goddamn that's some good chicken!

    For such an easy recipe this tasted amazing. I did use a little more dijon than suggested, I used chicken thighs with the skin on.

    All these wonderful chicken recipes. This is included. I did roast a bit longer because I like chicken so well done and crispy. I always add a bit more mustard

    I make different chicken recipes all the time. I have to tell you - this is the best recipe I've ever made. I used fresh thyme, rosemary and parsley for the herbs. I only marinated it for an hour in the fridge, popped in the convection oven and was crispy and delicious. Everyone loved it. Kale seasonings were good, but next time I might try a green that's not as hard - like escarole.

    I feel like it's a rare occasion when everything comes together perfectly when I do dinner. My husband is the cook...I bake. But I made this tonight and I'm proud to say it was PERFECT. ...and not a morsel of leftovers.

    My family loved this.
    I used boneless skinless chicken breasts and roasted about 1/2 hr.
    Chicken stayed extremely moist and flavorful.

    I made this meal for my husband and myself tonight. I also made a white wine sauce to go with the chicken (my husband detests dry chicken... However, the sauce was completely unnecessary. This is probably one of the moist chicken dishes I have made. Since it's just the two of us, I'm planning on using the leftover chicken to make Melissa d'Arabian's while chili from the He Made/She Made section. So excited!! Oh, and as for the left over greens (I used kale and collards... there are none. :-

    Chicken and collard greens. Not surprised.
    I am southern and will be trying this. It does sound good.
    When GWB came to Greenville Spartanburg area he had lemon grass chicken and I found the recipe and made it and it was good.
    Based of my knowledge of cooking and this will rock if you like southern cooking.

    As a fan of Simon & Garfunkel, I had to try this dish using "parsley, sage, rosemary amd thyme", and I'm glad I did. Delicious, easy, and satisfying. I had never had greens done this way, but I will again, perhaps with a splash of wine as suggested by someone else.
    P.S. Desiree's comment appears to be politically inspired, not culinary. This is supposed to be abiout the recipe, folks!!
