Ingredients

  • 1 medium shallot, thinly sliced
  • 1 bunch broccolini (about 10 ounces), stems cut into 2-inch stems, and florets
  • 1 medium bunch radishes, trimmed and very thinly sliced
  • 12 ounces whole-wheat rigatoni
  • 1 tablespoon sherry wine vinegar
  • 1/2 teaspoon finely grated orange zest
  • 3/4 teaspoon kosher salt, plus more as needed
  • Freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil
  • 7 ounces feta cheese, crumbled

Directions

Put the shallots in a bowl and cover with cold water. Soak for about 10 minutes; drain.

Bring a large pot of water to a boil and salt it generously. Fill a medium bowl with ice water and salt it as well. Add the broccolini to the boiling water and cook until crisp-tender, about 2 to 3 minutes. Stir in the radish slices, and cook 30 seconds, more. Use a slotted spoon or strainer to scoop out the vegetables and plunge them immediately into the ice water. Drain the vegetables, pat them very dry.

Add the pasta to the same pot of boiling water, and cook, stirring occasionally, until al dente, about 8 to 9 minutes. Drain and set aside.

Whisk the sherry vinegar, orange zest, the 3/4 teaspoon salt and pepper, to taste, in a large serving bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a dressing.

Toss the rigatoni, broccolini, radish and shallot with the dressing. Add the feta cheese and toss lightly. Serve warm or room temperature.

    I was looking for something quick and light, and this was perfect! I didn't use the radishes though. I added cut up grape... tomatoes as well as some chicken and garlic. I also substituted red wine vinegar for the sherry vinegar and it turned out fabulous. The feta cheese really makes this dish delicious, and the orange zest adds a nice flavor, but it's not overpowering to the dish. I may try lemon zest next time, though (just to taste the difference).     My husband and I really enjoyed this. I went ahead and got the radishes, they were nice, but really didn't have any flavor... cooked. I added a couple of diced roma tomatoes and some leftover crimini mushrooms into the batch as well which I thought really added a lot - my husband really didn't think he would have liked the dish without the mushrooms. I used brown rice pasta. I also only used about 4oz of feta as my hubby is on the fench with feta but I love it. This was really very nice. You could really use almost any veggie you want. The one BIG change I will make next time for sure is either eliminating or reallly reducing the orange zest as it really did overpower this dish. Oh and I used red wine vinegar because I didn't have sherry vinegar. I guess my overall review is that this is a perfect recipe to use what you've got and mix it up!Read more

    The dressing came out WAY too salty, and I didn't want to bother with it anymore, so I skipped it and covered the noodles in... 2 tbsp butter, and then added the feta so it melted on the pasta, with a few chunks left over. It was DELISH, and a nice change of healthy from usual choice of dinner! I loved the broccoli and radish. Will make again, with posted changes.Read more

    My family and I really enjoyed this. It was a bit too salty though, next time I will omit the salt in the dressing as the... feta is plenty salty enough. I don't much care for radishes but I still used them and was pleasantly surprised. Cooked they definitely mellow out some and were quite nice. This will meal will definitely make it into the regular rotation for those nights we need something quick!Read more
