The cookie part was good, but instead of the marshmallow filling, I'm going to use my homemade whipped cream filling. I don't like the marshmallow as filling for whoopie pies, it's just not the traditional way.

I use my own white buttercream frosting with this recipe but the cookies/cakes themselves are super easy to make and are moist and delicious. The one thing I will say is that I have NO idea how anyone could possibly make 36 out of this recipe. I get about 10 decent sized cookies. If you make them 1/2 dollar sized maybe. But this is a quick and easy hit each time I make it.

Made this as a quick dessert for Labor Day. Surprisingly I had to leave it in the oven a little bit longer for the marshmallows to melt. So easy to make and great with ice cream!

Made these today for friends coming over for drinks with their kids. Baked the cookies 7 minutes to get them done, using convection bake. Definitely let the marshmallows cool a good 4-5 minutes before putting the other cookie on top, otherwise the cookie slides around and the marshmallow spreads out too much. Super chocolatey cookie -- amazing and moist. Use good chocolate for sure. Easy recipe, kid friendly to make and eat. Will definitely make again.

I undercooked the cookies a little bit, knowing that they'd be back in the oven to melt the marshmallows, and even though they are sticky because of the marshmallows we find that they are on the dry side, even freshly made.
You definitely want to keep a glass of milk handy!

I'm going to try the other basic whoopie pie recipes, and not sure that I'll keep this one.
