I found I really had to season this. But it was very good w a dollop of natural yogurt & home made whole wheat croutons!

would make a perfect light lunch/dinner, served with some fresh bread or large homemade croutons. a note: i substituted vegetable broth for the water and it came out very salty. next time i make this, i will definitely hold off on adding additional salt til the very end.

Extrememly easy to make...takes about 20 minutes. Will definitely add to my soup collection. Can't wait to try it with some fresh corn.

This soup is SOOO good!
My neighbors always have too many peppers, so I get tons! This freezes well, too.
