I didn't put anywhere near the amount of salt that it called for so I found the flavor ok buy the texture totally turned my 4 year old and husbands stomach. They couldn't eat it. The zucchini turns really mushy.

I added 1 whole red onion and an extra egg to the mixture. I put less salt like all the other reviews advised. It was something different for a change and a hit!

Wow, I was surprised at how bad these tasted. Not that I am an experienced cook but all the reviews were 4 or 5 stars and the writing in the reviews were favorable. This is just an observation.
I followed the recipe but used half the salt and the fritters were so salty! I may try some of the variations other reviewers suggested to find a recipe that works for me.

I would make this again with some modifications:
-Less salt for sure!
-I used fresh gorgonzola chunks instead of parmesan and would do that again.
-You could add some bacon or crumbled sausage to add it to a brunch
-Be careful if you do this in 2 batches - if the pan is already hot you do not need as much time per side, otherwise it will burn.

Another name would be Potatoe Pancakes or Latkes without the potatoe. I use cracker or matzo crumbs instead of flour. My families favorite forever.

Those are great, easy to make, and a eally easy way to get my 20month old to eat zucchini. I use 2 med zucchini and it was fine. I cut them in small cubes (tiny cubes and it turned out good. First time I tries it, I put 2 eggs, it was still good but a little like a very tasty omelette. Second time I tried with 1 egg, didn't make that much of a difference.

These were SUPER easy to make and quite tasty. I read some of the reviews before I cooked them and took some advice that was posted. 1st I used 1 medium sized zucchini because I didn't know if these would be a hit or not, however, I still used the full teaspoon of salt. Needless to say, the fritters were a little salty for me. Other than that they were SUPRISINGLY tasty!! The dill and onion provide a nice contrast of flavor. Also, glad I followed one review on making sure the zucchini was drained well. To my surprise my SUPER pickey 3 year old loved them. I'll definitely fix these again with less salt!!!

My husband told me that these were a great way to hide zucchini. I found them easy to make and liked the tip about straining the zucchini in a colander for 10 minutes. It did keep the fritter batter from getting too loose.

Very yummy. I ended up finishing them in the oven. They got dark on the outside very quickly but were not finished on the inside.

very easy plenty of zucchini I ate mine plain because of my effort to drop a few christmas pounds, but sourcream or even apple sauce would be great
