very tasty with sour cream with chives. mine were a little greasy/soggy (from the frying i guess. would rather they were crispier.

I used 3 medium yellow squash, as that is what I had. These turned out great. Even my picky granddaughter loved them. Maybe those that said there wasn't enough zucchini used really small ones? It may be all in the definition of small, medium and/or large.

I grow my own zucchini in the summer and came across this recipe so I tried it. It was outstanding! They were gobbled up in seconds. It is a great snack or appetizer. I have so much zucchini and can't wait to make more.

These are super easy to make. I don't understand why people didn't like this??? After you let the moisture out of the zucchini, I took a ricer and pressed all the water out of them to make them as dry as possible. I also omitted the herbs and used about 2T of chives instead. They are delicious! I've made them 3 times now!

I love these. I have already recommended these to friends. I would only change the following: Add more zucchini, reduce the cheese to 1/3 cup, so it doesn't overpower the zucchini.
