Preheat oven to 350 degrees F. Cream butter and sugar. Beat in eggs. Dissolve soda in milk and add. Add vanilla. Fold in flour and salt slowly. Chill dough for half an hour. Roll to around 1/8 to 1/16-inch thick. Dip cookie cutter in flour before each cutting. Bake for 8 minutes. Cool and frost

DECORATING FROSTING:

  • 2 cups confectioners sugar, sifted
  • 1 teaspoon butter (melted)
  • 1/2 teaspoon vanilla
  • Milk or cream to moisten

Blend butter and sugar. Add the vanilla and then the milk a little at a time until you have a stiff mixture to be used for decorating. To use as frosting, add a few more drops of milk and spread over cookie with a knife.

    I have been making these cookies since 2003 and have always been extremely happy with them. This is the first year I used the frosting recipe as opposed to traditional Royal Icing and am happy with that too.

    These cookies were easy to make and, if not overbaked, are soft (not hard at all!
    They roll out well and taste good without being too goopy sugary sweet. I'd recommend rolling them at the 1/8 inch thickness and baking until they are firm (but not browned or even light golden.

    Both the kids and adults we gave them to liked them, and with the frosting they are "just right."
