Yummy yummy yummy. I would make these again! I cheated though and made with Salsa Verde from Trader Joe's. On a weekend I would make my own and will try again.

The filling is quite great. I add some garlic and onion powder to the salsa to add flavor. It's a good idea to cook the salsa a day ahed. Also, it's very important to fry the tortillas in oil, in order to get them crispy. Otherwise they can get quite soggy when you pour the salsa in the dish. When you make this, you'll never want to eat enchiladas at a TexMex again!
