Ingredients

Macaroni and Cheese Sauce Base:

  • 4 tablespoons butter or margarine
  • 4 tablespoons flour
  • 1 cup milk
  • 2 cups chicken broth
  • 1 pinch dry mustard
  • 1 splash hot pepper sauce
  • Splash Worcestershire sauce
  • Salt and pepper

Topping:

  • 1 cup fresh bread crumbs (either buy them or remove the crust off of some old bread and shop fine in a food processor)
  • 1/4 pound finely grated Parmesan
  • 1 tablespoon seasoning salt

Molten Cheese Sauce:

  • 8 (1-inch) cubes pasteurized prepared cheese product
  • 1/4 pound sharp yellow cheddar

Mix for Macaroni and Cheese:

  • 1 pound elbow macaroni
  • 3/4 pound sharp yellow cheddar
  • 1/2 pound Gruyere
  • 1/2 pound extra sharp white cheddar
  • 4 roma tomatoes, diced fine
  • 24 (1-inch) cubes pasteurized prepared cheese product

Directions

For the Macaroni and Cheese Sauce Base: Melt butter in a 4-quart saucepot over medium high heat. Add flour and mix until flour is incorporated into butter. Cook, stirring frequently for 2 minutes. Add milk and chicken broth and continue to cook until sauce is thick and bubbly. Remove from heat and season with mustard, hot pepper sauce, Worcestershire, salt and pepper. Allow to cool before using.

For the Topping: Mix all ingredients in a bowl and set aside

For the Molten Cheese Sauce: Take about 1/2 cup of the sauce base and warm over a medium burner in a small saucepan. When warm, add cheese and cook until melted. Season as necessary.

To make the Macaroni and Cheese: Cook macaroni in salted water, drain and rinse with cold water. Place the yellow cheddar, Gruyere, white cheddar, tomatoes, and pasteurized prepared cheese product in a large mixing bowl. Add 3/4 of the macaroni and cheese sauce base or about 2 1/2 cups, and mix thoroughly. Place the mix evenly into 4 small casserole dishes or 1 large serving plate. Sprinkle with topping and bake in a preheated 400-degree oven until hot and bubbly. Make sure to serve lots of molten cheese sauce.

    Very good and unique mac n cheese recipe using the chicken broth. Never had to use the extra cheese sauce, so you can cut... down on that part of the recipe, it is already super cheesy. Every age group enjoyed this and everyone looks forward to me making it, but it is not an everyday mac n cheese dish.Read more

    I made this dish twice, the first time I left out the 'pasteurized prepared cheese product'/Velveeta because I thought I was... too good for it; substituting gouda and just a bit of blue cheese crumbles. It was really good but turned out a little grainy. So the next time I added the Velveeta and it was much creamier. I also omitted the molten cheese sauce both times because it was already 'ultimately' cheesy as it was. I though surely I had read the recipe wrong when I was adding all the cheese, but somehow it all works out! Delicious and I agree with other reviewers, the chicken broth in the sauce is a really nice touch! The residual oil in your bowl after you eat it makes it a little difficult to make too often though.Read more

    I searched for hours to find a good macaroni and cheese recipe and decided on this one. It has become a staple in my house,... and guests fight over dinner invites. I altered it a little because I tend to do that with everything. I left out the tomatoes (family does not like them). I also no longer make the molten cheese sauce because it is just too much and it tastes great without it. Definitely try it?very good!Read more

    I made this for some friends...good thing I shared because I could feel my arteries clogging with ever delicious bite. I... thought the molten cheese sauce was a little too much, next time I won't worry about that. The Mac and Cheese (I made without tomatoes) was just fine on it's own.
