We recently were guests at a friends house along with six other couples, and Joan's Mac and Cheese was the hit of the luncheon! I am a pasta lover and have been a big fan of Mac and Cheese since i was a child (many years ago and this was indeed the best I have had. We did not find the sauce runny, but I intend to make this dish in the next few weeks and will report back at that time! Thanks Joan for a great recipe, I can't wait for the next serving!!!

I was looking for a smooth creamy mac n' cheese, but I wanted a more gourmet combination of cheese. I didn't want to guess which cheeses to mix and match, so I thought I would search here. Unfortunately, I had the same problem as the other reviewer, a runny and curdled texture. I wish I could figure what the difference is between mine and all the successful others-by the way it was quiet running and I actually left out 3/4 cup of milk because my 9x13 pan was about to overflow (and the other reviewers runny issue. I would say that was the problem but since the milk and the cheeses didn't bond it doesn't seem as if it would make a difference. I am still mind boggled how so many people have success and others fail with these recipes, and I don't just mean this recipe, you see it all over the sight good vs bad on the reviewers.

This recipe was easy to make and has become one of my favorites. Next time I make it, I'm going to use smoked gouda cheese!!

This is a really delicious mac and cheese recipe. My family and friends beg me to make it for dinners and parties. It is very easy, but prep time does take longer than 10 minutes...lots of cheese shredding. As a hint, I would probably warm up the 3 3/4 cups of milk on the microwave just to get the chill out of it. I poured the cold milk onto my melted cheese and thought it took longer to mix in the long run. Either way, it comes out absolutely DELICIOUS!!!!!!!!!!!!!!!

Really GOOD!!!. The blend of cheese with cream cheese and cottage really adds a smoothness. Try adding fresh bread crumbs or veggies! COMFORT FOOD!

I can't ever wait to get home from college for vacations so I can make this recipe! It is so rich and delicious. My tip for anyone who wants to make this fabulous mac' and cheese dish is to cook the macaroni only halfway (al dente before putting it in the oven.

When reading through this recipe I was concerned that it did not call for a white sauce to be made. I followed the recipe exactly and was not surprised when the final result came out sligthly runny and curdled. I would recommend at least heating the milk or make a white sauce with the butter and 4 Tbsp flour.
The flavor of the dish is good.

I have made this recipe many times for potlucks and for my family. Everyone loves it and says it's the best Mac and Cheese they've ever had. It's very rich and tasty. This is comfort food at its best. Definitely worth a try!
